One of the best ways to warm the cockles on a cold winters evening is to produce something hot, wholesome and easy to make. My Broccoli and Stilton soup will satisfy vegetarians and people who eat meat, alike. It is best to use locally produced ingredients(support your local farms) and the cooking will take about half an hour to 40 Min's for best results. You will need:-
To serve 6-8 people
500-600gs of Stilton cheese(depending on how strong you want it)
3 stems of celery
1 whole leek
3 spring onions
800gs of broccoli
15gs of whole peppercorns
2 litres of boiling water
knob of butter
To start with bring the water to the boil. Remove the florets of broccoli from the stems and put the stems into a food blender. Add the spring onions and the celery and the leek into the blender along with the knob of butter. Add half the boiling water into the blender and then add half the peppercorns. Blend until all is finely chopped into a thick mixture. Then add the mixture to the rest of the boiling water and then add half the Stilton to the boiling mixture. Then boil until reduced by one quarter. This should take 20 Min's or so. When the soup has reached a thick consistency add the rest of the Stilton and the florets of broccoli . Simmer 4 a further 5 Min's and serve with a crusty white Cobb with butter.
This soup is easy to make and can be frozen. Enjoy!
