LEMON JELLO CAKE

This recipe has been a family favorite for years. The cake is sweet and tangy with a pleasantly cool and creamy lemon topping. Best of all, it is very quick and easy to prepare.

INGREDIENTS:

1 lemon cake mix

1 c. hot water

2 (3 ounce) packages lemon flavored JELLO gelatin

1 cup milk

1 (3.4 ounce) package lemon pudding mix

1 (8 ounce) package Cool Whip, thawed

Prepare the lemon cake mix according to package direction. Bake in a 9 x 13" cake pan. Allow cake to cool. Take a fork and poke holes all across surface of cake.

Dissolve 1 package of the lemon gelatin in the cup of hot water. Pour warm gelatin over the entire cake. Chill in refrigerator.

In a large bowl, mix together the milk, lemon pudding, and remaining package of lemon gelatin. Mix until smooth and all ingredients are thoroughly dissolved. Fold in the whipped topping and spread over cake. Refrigerate until ready to serve.
