This lucious cheese and onion soup is a perfect meal to enjoy on a cold winter's day.
Onion and potatoes are gently simmered in milk until creamy and delicious. Finish with crumbled Stilton and whipped cream for the most comforting and luxurious soup imaginable.
Makes 6 to 8 servings
Ingredients:
1 stick butter
1 pound onions, thinly sliced
1 garlic clove, minced
1 pound boiling potatoes, peeled and cubed
2 cups milk
2 cups water
Salt and coarsely ground pepper to taste
4 ounces Stilton cheese, crumbled
Whipped cream
Minced fresh parsley
Preparation:
* Melt butter in heavy large sauce pan over medium-low heat.
* Add onion and garlic and cook until softened, stirring occasionally, about 15 minutes, do not brown.
* Add potatoes and stir to coat completely with butter.
* Add milk and water and bring to boil.
* Season with salt and pepper.
* Reduce heat, cover partially and simmer 1 hour.
* Puree soup in batches in food processor.
* Return to pan.
* Add Stilton and stir over low heat only until cheese is melted.
* Ladle soup into bowls.
* Garnish with swirls of whipping cream and minced fresh parsley.
