Recipes: Scrambled eggs

Many people don't consider scrambled eggs as a great start for a meal, yet they can be. Simply mixing up a few eggs with a fork and cooking them in a small amount of olive oil or bacon grease until they are to the desired firmness is pretty easy, after all.

The flavor is good for a change from other egg dishes, too, but it is bland. However, so many things can be added to scrambled eggs that it can become much more than just something to serve with other breakfast items. In fact, scrambled eggs are even great for dinner.

How about livening up those scrambled eggs? Here are a few ideas how to do this:

Herb cooked scrambled eggs: If you are having them with breakfast, sprinkle a little basil, oregano, thyme, or sage on the eggs while they are cooking.

Cheese scrambled eggs: grate a small amount of cheddar, jack, or Swiss cheese over the top of freshly scrambled and hot eggs, allowing the cheese to melt. This is suitable for breakfast or as a side dish at dinner.

Scrambled eggs and tomatoes: Slice a ripe tomato while you are cooking the eggs, then place a layer of tomatoes on top of the cooked eggs. Again, this can be served with breakfast or dinner, and it is especially nice for tomato lovers. Basil also goes well with these scrambled eggs.

Scrambled eggs and sausage: The key here is to brown your favorite sausage and add the egg mixture to the sausage when it is browned, cooking and blending it together. This will work with any type of sausage, but it is especially good with venison sausage. Sage is a good herb to sprinkle over the top when this dish is done.

South of the border eggs: Add some crushed chilies or diced jalapenos to the eggs while cooking for a spicy treat.

One eyed Pete: Butter one side of a slice of bread, and then cut the center out of it. Mix up the eggs, and put the bread, buttered side down, on a griddle over medium heat. Pour the scrambled egg mixture in the hole and cook. The piece of bread that is cut out of the center can also be cooked and served with the meal.

Oriental scrambled eggs: In a fry pan, heat a can of bean sprouts then add scrambled eggs. Cook, adding just a little soy sauce. This actually isn't far off from egg foo yung.

Dinner scrambled eggs: finely dice celery, bell pepper, onions, or tomatoes into a pan and brown the mixture, then add the scrambled eggs and cook until they are the desired doneness. Similar to an omelet, any of these ingredients can be omitted and others added, and this dish is excellent when served on a bed of rice with chicken gravy poured over the top. Ground meat can also be added for a great flavor. This dish is terrific when served with fried mashed potato patties.

Scrambled eggs are the close relatives of omelets, and they can be cooked in nearly any way an omelet can be. They go great with gravy, meats, potatoes, and tomatoes, but fit almost any dish you want to eat. There are also so many ways to prepare them that no two ways ever need to be the same, unless you happen upon a way you especially like.
