Mediterranean Baked Mushrooms
Button mushrooms are succulent, delicious and commonly served with garlic butter.This recipe makes them into something really special, baking them in a rich tomato sauce topped with Parmesan cheese encrusted wholemeal breadcrumbs.
Ingredients:
575g/1.75lb button mushrooms
50g/2oz butter
440g/1lb passata or tinned chopped tomatoes
1 small onion finely chopped
2 cloves garlic, crushed
2 tbsp oregano
6 tbsp grated Parmesan cheese
3 tablespoons wholemeal breadcrumbs

First, make the tomato sauce. Lightly fry the onion and garlic until translucent before adding the the tomatoes and herbs. Simmer gently for 20 minutes.
In the meantime, prepare the mushrooms. Cultivated mushrooms should not need much more than a wipe over as they are grown in sterilized compost. Peel only if necessary and remove the stalks. In a pan, melt the butter before adding the mushrooms and gently frying for five minutes.
Transfer the mushrooms to a shallow oven proof dish. Pour the tomato sauce over and combine the ingredients before topping with the breadcrumbs and finally the cheese. Bake in a preheated oven at gas 5/190c/375f for 20-25 minutes until the topping is golden brown.
