Pumpkin bread is a delicious treat it can be served for breakfast as a snake or dessert. You can even get creative and wrap it up and present it as a gift for a friend or co-worker. This recipe makes 3 small loaves or 1 large loaf of pumpkin bread.
Ingredients
15 oz. can of pureed pumpkin
4 cups all purpose flour
1 1/2 cup of golden brown sugar
1 stick butter, softened
3 eggs
2 tablespoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
2 cups chocolate chips or chopped walnuts (optional)
Preheat oven to 350 degrees.
Beat eggs in a medium sized bowl and add pumpkin, brown sugar and butter and beat till creamy.
Sift the dry ingredients and combine them in a separate bowl. Do NOT add the chocolate chips or nuts just as yet. Add the dry ingredients in 3 parts till the mixture is moist but thick enough to spoon. Mix in the chocolate chips or the walnuts.
Spoon the pumpkin bread batter into an appropriate sized bread pan. Bake the bread 50 minutes to1 hour.
Test by inserting a clean knife into the center of the pumpkin bread. If the knife comes out clean without any batter then the bread is ready. Cool for 30 minutes on a wire rack and serve warm.
Pumpkin bread can be stored in the freezer for up to 6 months for a great treat anytime!
