Cowboy Beans is a favorite in our house, thanks to my husband's insistance that I find this recipe. It is a great alternative to chili and can be cooked in the crockpot for an easy filling main dish.
INGREDIENTS
1 lb. ground beef or turkey
1/2 c. chopped white onion
1/4 c. ketchup
1/4 c. barbecue sauce(I use KC Masterpiece)
1/4 c. granulated sugar
1/4 c. brown sugar
2 Tbsp. molasses
1 Tbsp. chili powder
1 tsp. each salt/pepper
1 can pork and beans
2 cans pinto beans(with jalapenos)
1 can kidney beans(drained)
1/2 lb bacon-cooked and crumpled
First brown beef or turkey and drain. Then add in chopped onion and cook until tender. Transfer beef/onion mixture to crockpot and add in remaining ingredients except bacon, and stir. Once everything has been combined, top with bacon crumbs. Cook on high for 1 hour, then reduce heat to low and cook for additional 1 to 2 hours. Serve with warm cornbread and molasses.
