Taco soup is one of my favorite soups, this recipe is quick and easy to make. You can make it as mild or spicy as you like, this version is for a mild taco soup. However, I have included a few spicier ingredients as options for those of you who enjoy a true South of the Border taste.
Ingredients
1 pound of fresh ground beef, turkey or chicken (cooked)
6 cups of water
1- 12 ounce can of tomato sauce
1- 8 ounce can of diced tomatoes (drained)
1 - 8 ounce can of dark red kidney beans
1 small onion (diced)
1 cup of green peppers (diced)
1 package of mild, medium or hot taco seasoning mix
Optional Ingredients
2 tablespoons of hot sauce (your choice)
2 tablespoons of red crushed peppers
2 jalapeno peppers (diced)
Preparation
In a large pan combine all your ingredients and cook on low heat for one hour. Top off with cheese and serve. Serves 6
