Holiday fruit salad is a very delicious, colorful, and nutritious salad. The salad is an excellent way in which to get children to eat their fruits. So many of the foods served during the holidays are rich and lay heavy on the stomach so it is always nice to be able to provide something on the lighter side. This is an excellent recipe to prepare for large family events through the holidays as most everyone enjoys it.
The following recipe was my mother's and was only made at Christmas. It makes several quarts of salad. The recipe would need to be cut to 1/3 of the amount of ingredients if you prepared this recipe solely for use at home. It will keep chilled for 7-10 days.
HOLIDAY FRUIT SALAD
INGREDIENTS:
6-8 ripe bananas
6 large Red Delicious apples
3 pounds of seedless grapes
1 can of chunk pineapple
1 can of mandarin oranges
2 jars of maraschino cherries
1 bag of miniature marshmallows
2 Cups pecan halves (can substitute pecan pieces)
3 Cups of orange juice
3 Tablespoons Corn Starch
DIRECTIONS:
Lightly sweeten the orange juice with sugar if it was unsweetened. Put the corn starch in a medium saucepan and slowly add in just a little of the orange juice until it is well blended. Add in remaining orange juice and stir until well mixed. Bring saucepan to medium heat and stir over heat until the corn starch begins to thicken the orange juice just a little. Remove from heat and let cool while chopping and slicing the fruits.
Begin preparing fruits in the order in which listed, combining all in a large bowl or container that would hold 6-8 quarts of food. Bananas and apples have a tendency to turn dark when cut. Be sure to prepare fruits in order listed to avoid this. Drain mandarin orange segments and add to bowl. Drain chunk pineapple and cut each piece in half lengthwise, adding to bowl. Drain maraschino cherries and slice each in half lengthwise. Rinse and drain grapes and cut each in half lengthwise, adding to bowl of fruits. Peel and slice the bananas. Wash, dry, core, and dice the apples, adding to the bowl of fruits. Add the pecan halves and miniature marshmallows.
Pour the orange juice dressing over the fruit mixture in the bowl. Gently stir fruit mixture until all ingredients are well mixed. Chill in covered containers until served.
This fruit salad is so delightfully delicious it quickly disappears at large family gatherings or social functions. This recipe is so light and delicious that it is also excellent to make in smaller proportion for brunch or lunch entertaining outside the holidays.
