When I get in the kitchen things can get interesting and sometimes tasty. I love cooking without a recipe and just seeing what I come up with. Most recently was the creation of the Kickin' Cheesy Chicken Tenders.
Ingredients:
2 lbs boneless chicken breasts cut in strips
1/4 cup oil (olive, vegetable or corn)
4 eggs
1-2 tbsp hot sauce (adjust for desired temperature)
1 tbsp Cheddar Cheese popcorn seasoning
1-2 cups of regular bread crumbs
1 tbsp Old Bay Seasoning
salt and pepper to taste
Over medium heat begin heating oil. In a medium bowl, beat eggs and add hot sauce. In another bowl combine bread crumbs and remaining seasonings. Place as many chicken strips as you can fit in the egg wash, let stand for just a moment then transfer them one by one through the bread crumb mixture. Pan fry the breaded chicken strips until golden brown. Make sure to check the interior for doneness. I like to break one open and sample the taste anyhow. I like to serve the Kickin' Cheesy Chicken Tenders with seasoned curly fries and a fruit of some kind. The whole family will love this dish.
If you want to avoid frying, I'm sure that you can bake these in a 400 degree oven just as well.
