Recipes: The perfect omelet

Omelets are not only delicious, they are a very nutritous food to serve our family and guests. Almost anyone you to talk to loves omelets and wishes they had time to make them more often. You can speed up preparation of omelets for breakfast by preparing a variety of additives to suit your family's taste the night before.  These may include shredded cheeses, diced ham, bacon bits, diced tomato, diced onion, diced green pepper, hash browns, sliced fresh mushrooms, salsa, and any other ingredient you think your family may like.

The secret to preparing a light, fluffy omelet is allowing the eggs to come to room temperature prior to cooking and the addition of a tablespoon of water per two eggs.  If pressed for time you may use eggs directly from the refrigerator and add a tablespoon of warm water.  Otherwise, use room temperature eggs and cold water. 

Never add butter or oil to the skillet to make omelets.  This will make the omelet heavy and destroy the fluffy texture created by the water.  Instead, spray a non-stick skillet with a light coating of cooking spray.

If you have never attempted to make an omelet before, try the following simple cheese omelet recipe.

Ingredients:

2 large eggs, at room temperature

1 Tablespoon cold water

salt, to taste 

1 Tablespoon finely shredded mild cheddar cheese

Cooking spray

Directions:

1.  Place contents of two eggs in a small mixing bowl. 

2.  Add the tablespoon of cold water and salt.

3.  Beat by hand with a fork until well blended and fluffy.  Do not overbeat.

4.  Spray non-stick skillet with cooking spray and bring to medium heat.

5.  Add egg mixture to the skillet and allow to cook until edges are beginning to get firm.  Do not turn over.

6.  Add shredded cheese to center of one side of the omelet.

7.  Gently flip one side of the omelet over onto the other side of the omelet and allow to cook until the bottom half is set.

9.  Gently turn the omelet over once and allow to cook on the remaining side for approximately one minute. 

10.  Slide omelet from skillet to plate and serve.

If you follow these simple instructions, you will love your new creation and add omelets to your breakfast menu quite often.
