I recently discovered the wonder of roasted broccoli. And, it's so simple, anyone can make it!
One bunch broccoli
Olive oil
Salt
Pepper
Preheat oven to 450 degrees. Cut broccoli into florets and half the florets so each piece is close to the same size. Put in a bowl and drizzle with olive oil. Add salt and freshly ground pepper. Toss to combine. Put broccoli on cookie sheet covered in foil or parchment paper. Make sure each floret is separated. Roast for ten minutes before stirring and separating. Roast another ten minutes or until tops are crisp and browned.
You can add extra seasoning when you remove the florets from the oven - a drizzle of soy sauce, some sesame seeds, lemon juice, whatever you want to try!
This method also works well with cauliflower.
