Drink recipes: Summer cocktails

Sheri's Mojito

One of my best friends is an expert when it comes to creating her own version of whatever cocktail is "hot" right now. This one is so good you might want one for breakfast!

Gather:

Brown Sugar

Limes

Fresh Mint

Pineapple Juice - I use the "mini" cans of juice, about 4 oz.

Bacardi

Ice

In a tall glass - I use my beer glasses that are like a larger version of a champagne glass, put the mint, a wedge of lime and about a tablesppon of brown sugar. Smash them all together untill the brown sugar is nice, wet and gooey.

Add ice to the top of the glass.

Pour "two fingers" of bacardi into the glass. (By "two fingers" I mean take a shot glass and wrap two fingers around it. Now pour that much Bacardi into it. That's "two fingers".)

Now pour in one can of pineapple juice.

Use a straw or long spoon to stir. We also liked using a straw to drink, that way you get the full flavor of the brown sugar, mint and lime at the bottom.
