One of the problems with this discussion is that the Easter we have now is fairly ambiguous as to what it stands for. As a result, I think, it's fairly easy to say that just because the Christian Church started to celebrate its festivals at the same time as pagan ones, it means that the Christian festivals are merely adaptations of pagan ones. The Church considered paganism abhorrent and may have wished to overshadow its festivals with Christian ones. In particular, part of the Babylonian fertility cult which the pagan Easter dates back to included homosexuality rites. It's easy to see how the Christian church might have wanted to overshadow any festival which included things like this.
My point is, where's the paganism in Easter today? We don't have any comparable rituals to the fertility cult, do we?
And as to how eating Easter eggs is Christian, the egg symbolises new life. Which is what the entire New Testament is about.
