This chicken dish is comforting and so easy to make. It's so satisfying and filling, perfect for a cold wintery night or afternoon. You will need the following:
4 thick chicken breasts-without the bone
2 cans of mixed peas and carrots
3 stalks of scallions diced
1 baking dish
2 cans of cream of chicken soup
salt and pepper to taste
Pillsbury bisquits (2)
Take your chicken and place it onto a cookie sheet. Brush with a bit of olive oil. Bake for an hour at 350 degrees.
When your chicken is done, allow it to cool for about 15 minutes. Take the breasts and cut into cubes. Place into a large bowl. Add to the chicken, your canned peas and carrots, scallions, canned cream of chicken, salt and pepper. Mix together. Fold into a baking dish. Now take the bisquits and place on top, covering the entire pan. Bake on 350 until top gets golden brown.
Serve and enjoy.
