When the sky turns gray and new snow is falling, my heart longs to bake! Whether it's a loaf of bread, some cookies, coffeecake or a batch of cinnamon rolls, I love to bake on a cold winter's day! Here is the cinnamon roll recipe I love to make on such a day!
Remember the Angel biscuits your Mom made? This recipe is based on that method, using Bisquick Baking Mix to turn out some very light and fluffy cinnamon rolls! Here is that special recipe.
-Angel Cinnamon Rolls
2 cups baking mix (Bisquick)
2/3 cup half and half
1/2 cup all purpose flour
1/4 cup sugar
1 pkg. dry active yeast
1/2 cup softened butter
1/2 cup cinnamon
1/4 cup brown sugar
1/4 cup granulated sugar
Butter, grease or spray a 14 inch baking tray or cookie sheet pan with non-stick cooking spray.
In a medium sized microwave safe bowl, heat half and half in microwave for 30-40 seconds on high, to warm. Add yeast to half and half, stir. Set aside for 5 minutes.
Add Bisquick and sugar, stir together until a dough ball forms. Place dough on a floured counter top and knead a few times, no more than ten or twelve times. Roll dough out to 1/4 inch thick rectangle, approx. 14x9 inches.
Spread butter on dough, sprinkle evenly with half the brown sugar, half the granulated sugar and 2 tbsp. cinnamon. Repeat sugar and cinnamon step. (it does make a difference in taste)
Roll up tightly beginning from 14 inch side. Seal. Turn cut side down on counter top. Slice into 2 inch thick slices. Place slices seam side down on prepared pan.
Using the handle of a wooden spoon, gently press in the center of each slice. Pressing handle about half way through the slice or until a butterfly shape forms, fanning out the slice on each side. These are your angel cinnamon rolls.
Allow to raise in a warm, draft free spot for 20 minutes.
Bake in a preheated, 375oF oven, for 20-25 minutes. Or until rolls are lightly browned and done in the middles.
Remove from oven, let cool 2-3 minutes before applying glaze.
-Penuche Glaze
1/4 cup brown sugar
1/4 cup cream or half and half
1 1/2 cups powdered sugar
1/2 tbsp. butter
2 tsp. vanilla
chopped pecans or walnuts
In a saucepan or microwave, heat to a boil (do not boil) cream, butter and brown sugar. Remove from heat. Using a mixer, beat in powdered sugar and vanilla. Drizzle heavily over angel cinnamon rolls, sprinkle with chopped nuts.
Serve these delightful cinnamon rolls to your own "Angels" as they arrive home some cold winter day, you'll receive hugs and kisses for your efforts!
