For those of you who love steak. This recipe will make you want to use these flavors each time you make steak. I am a steak lover and so is my husband. I have made fried steak, broiled, steak kabobs, steak sandwhiches. I think the secret to wonderful tasting steak is all in the marinade. We love it with a side of mashed potatoes and some butter sweet corn that we would get from upstate. So the next time your in the mood for steak, you may want to try this recipe.
You will need:
Steak (Shell or Club)
2 limes
2 Oranges
4 cloves of garlic
Adobo seasoning
A pinch of Cumin
1 Onion (sliced)
Olive Oil
Butter
Salt and Pepper to taste
Large skillet (nonstick)
In a large bowl, squeeze in the juices of your oranges and limes. Now add your garlic, cumin and adobo. Take your steak and place it into the bowl.
Cover with Saran Wrap and place in the frig for about an hour so the steak absorbs all the flavors of the Cumin, Oranges, Limes, garlic. This will give the steak a tangy flavor from the oranges and limes, yet a smokey flavor from the cumin.
Now take a skillet and drizzle a bit of olive oil in the pan. Now add a pat of butter. Turn your stove on to low heat. When cooking protien you never want to start off with high heat. You want your meat to cook all the way through. Unless you are searing and than placing into the oven to bake, start with a low flame.
Now, take your skillet, drizzle a bit of olive oil and a pat of butter. Add in onions. Allow them to carmalize (this will take about 10-15 minutes) so be pateint. The carmalization of the onions will add great flavor to your steak.
Now take your onions out and just cover a nice platter with them. This will be the bedding for your steak. Set aside. Add your steak into the same pan. Allow it to brown. leave the fat on, this will give it flavor. After it is cooked you can trim the fat but for now, you want it to cook with it's own juices from the fat. When I was younger, I would love when the fat would get all crispy and crunchy.
Allow your steak to cook for about 10 minutes on each side. When your steak is done. Place it on top of the onions. Take a sprig of parsley and dress it on the sides.
TIPS:
You can add a bit of red wine to you chose to the skillet after the onions carmalize.
Remember, allow your meat to sit for 10 minutes before you cut into it. Letting your meat settle first allows the juices to distribute evenly.
