Recipes: Barbecue sauce

by G E Barr

THE SAUCE

There are only a few things which I can cook well. One of them is barbecued country style ribs.

The Sauce:

1. half a cup of A-1

2. 2 cups of ketchup (I prefer Hunt's)

3. 1/4 cup of brown sugar

4. 1/8 cup of mustard (just cheap, real mustard)

5. A couple of shots of dill pickle juice

6. A couple of shots Bailey's Irish Creme

7. Good garlic salt and fresh pepper

8. Minced nnion

9. Half a stick of real butter

In a medium sauce pan melt the butter and add brown sugar, A-1, dill pickle juice, onions and spices until sugar brown sugar melts.

Mix in the rest of the above ingredients and simmer over a medium heat about five minutes before your meat is ready to be removed from whatever type of cooking you desire. Pour the barbecue mixture over the meat and return it to cooking. (If you are grilling, drop each rib in the sauce and then serve - nothing worse than the taste of burnt sauce.)

To prepare the ribs:

The slower you cook the ribs, the better they are going to be.

In the oven:

Set it for 325 degrees. Wrap each country style rib in foil with sliced apples and honey. Let them bake for about 45 minutes wrapped. After the 45 minutes, remove the foil and return them to oven to brown. About 20 minutes. Drip sauce over them and in five minutes, you've got some tasty meats for the hungry.

Serve with saffron rice and broccoli.
