I love chicken soup. I loved my grandmother's since I was a kid. She made the best and I have to say, my father's wife also makes a mean soup. But I also love my own. It's easy and so good for you. What I love about chicken soup is, you can add what ever you want and it's all natural, you can freeze it and it is probably the most comforting of all foods.
2 chicken breasts cut in half
2 chicken legs-washed
1/2 onion cut in half
1 garlic clove
1 table spoon of crushed tomatoes
1 large pot
salt, pepper to taste
1 bay leaf
1 sprig of parsley-chopped
2 scallions-diced
1 teaspoon of thyme
1 can of chicken broth
1 box of tubbetini or elbow macaroni
3 carrots-chopped
2 stalks of celery-chopped
Step One: In a large pot fill with cold water. Add chicken and all other ingridients.
Step Two: On low heat allow to simmer for 3 hours.
Step Three: Turn up the heat, allow to boil, than add the pasta in and cook for another 7 minutes. Serve hot and enjoy.
