Recipes: Lemon pound cake

To compliment any great meal a dessert is a must. It will round off your meal with a huge bang. Choosing the right dessert to compliment your meal is very important. After a full course meal, you do not want to serve a heavy dessert.

A time saver will be to find a dessert that will compliment most meals. One solution is to serve cake. Cake is an all time favorite of most children and adults. The secret is to find the perfect cake. Fortunately, half of the job has been done for you. To create a cake light as a feather, follow the directions listed below for a lemon pound cake.

You will need the following ingredients:

Lemon Pound Cake
7 oz. Plain flour
2 tsp. Baking powder
tsp. Salt
8 oz. Unsalted butter, softened
8 oz. Caster Sugar
4 Eggs
Grated rind of 1 lemon
1 tsp. Lemon essence
tsp. Vanilla essence

Lemon Glaze
5 oz. Icing sugar, sifted
2-4 tbsp. Lemon juice

Directions:

1. Preheat oven to 325 degrees. Grease and flour an 8x4 inch loaf tin. Sift together the flour, baking powder and salt.

2. With an electric mixer, beat the butter at medium speed until soft. Gradually add the sugar and then beat until light and creamy for five minutes.

3. Add the beaten eggs a tablespoon at a time, beating well after each addition. If the mixture begins to curdle, sprinkle in a little of the flour mixture.

4. Add the flour mixture in 3 batches, folding in lightly with a spoon until just blended. Stir in the lemon rind, lemon essence and vanilla essence.

5. Scrape the batter gently into the tin, smoothing the top and making a slight indentation along the centre. Bake 30 minutes until golden and the centre springs back when pressed with a fingertip.

6. Remove to a wire rack and cool in the tin 10 minutes. Turn out on to the wire rack and turn topside up to cool completely.

7. Sift the icing sugar into a small bowl and gradually stir in enough lemon juice until a smooth glaze is formed. Gently spoon over the warm cake and allow to set before slicing.

For an added bonus, scoop one serving of your favorite ice cream on top of each slice of cake, sherbet works just as well. If you want something even lighter than ice cream, Jell-O makes a nice addition.
