Cheeseburger soup is a great alternative to a regular weeknight meal. It's a familiar food friend that won't scare or intimidate younger children, and it makes for a comforting and easy-to-make meal for adults who have no time to be in the kitchen.

You'll need:

1 small yellow onion, chopped
1 medium-sized carrot, peeled and chopped
3 cloves garlic, finely minced
1 celery rib, chopped
4 russet potatoes, peeled and diced into 1/2" cubes
1 bay leaf
1 lb. ground beef
3 T. flour
1 small can tomato sauce
3-4 c. beef broth
1 c. Velveeta cheese
1/4 c. Cheddar or Monterey Jack cheese, grated
salt and pepper
2 T. oil

1. In a saucepan, saute the garlic and onion in the oil. Stir in the flour. When aromatic, add beef. Stir and break up the beef.

2. When beef is nicely browned, add the carrot, celery, and potatoes. Cook until somewhat brown.

3. Stir in the beef broth. Add salt and pepper and bay leaf. Allow to come to a boil.

4. Reduce heat and stir in the tomato sauce. Allow to come to a boil. Add the cheeses.

5. Sour cream, heavy cream, or milk may be added for additional thickness, or add more flour or allow to simmer without cover on.

Serve hot with dinner rolls.
