There are many ways to make homemade macaroni and cheese, but one of my favorites employs my Crock Pot. Slow cooker mac and cheese is quick to assemble and provides delicious results. The long cooking time makes it creamy and tender, without much hassle.
Crock Pot Macaroni and Cheese
Ingredients:
8 oz. elbow macaroni
1 (14 oz) can evaporated milk
1 cup sour cream
1/4 cup melted butter
12 oz sharp cheddar cheese, shredded (save about 1/2 c. for the top)
1/4 cup grated parmesan cheese
1 egg
1/2 tsp salt
White pepper to taste
Directions:
1. Cook elbow macaroni in boiling water until al dente (1 to 2 minutes less than package directions). Drain well.
2. Butter slow cooker well.
3. Mix all ingredients together.
4. Pour into slow cooker.
5. Top with remaining cheese.
6. Cook on low for approximately 3 hours.
This simple dish makes a wonderful side dish to chicken or meat and is very kid-friendly. Once you set your Crock Pot, you can forget about it for the next three hours. Pull out that slow cooker and put away the blue box!
