Recipes: Cucumber sandwiches

Cucumber sandwiches are great for the beach, a party or as a side dish with tea. My mom taught me this recipe so my kids could enjoy a good tasting snack. I did not think my kids would like cucumber sandwiches the way their grandma made them but I was wrong. They gobble them up and ask for more every time.

Cucumber Sandwiches- Little fingers version

Ingredients:
2 cucumbers- skinned and sliced thin
Mayonaisse
8 slices of white bread or your bread of choice (rye works really well)

Directions:
Spread mayonaisse on each slice of bread. Place sliced thin cucumbers ontop of 4 pieces of bread. Place a slice of bread on each cucumbered piece of bread. Slice the sandwiches so that you get four fingers from each one. You should have 16 fingers in total. Place in a baggy if you are going somewhere for a finger food or stack on a round plate in a circlular manner. Serve immediately.
