Chinese Chicken Salad can be served as a side dish or even an entire meal can be made from the delicious ingredients. I have made the salad and served in tortillas like a wrap, bread bowls, and even taco salad bowls. There are many variations for serving, so allow your imagination to go wild.
Crunchy Chinese Chicken Salad
Preparing the chicken:
2 boneless skinless chicken breasts
garlic powder
fresh ground pepper
olive oil
Brush chicken breasts with a little olive oil and sprinkle with salt, pepper and garlic powder.
Either grill or brown in a pan on the stove.
You can use leftover chicken also if you have some left from a previous meal.
Chill the chicken.
Then cut the chicken into small chunks and set aside.
Preparing the vegetables:
1 head Napa Cabbage shredded
5 green onions chopped
1 large carrot grated
Place the vegetables in a large bowl.
Preparing the Crunch:
2 packages of Ramen noodles Asian flavor -set the flavor pkt aside
crush the noodles up in pieces
1/2 cup butter
1/2 cup sesame seeds
1 small package slivered almonds.
In a frying pan melt butter. Add the other ingredients. Brown these ingredients and set aside. These must cool completely before adding to the salad or it will wilt the salad.
Preparing the sauce:
Whisk the following ingredients together
1 cup olive oil
1 cup sugar
2 teaspoons soy sauce
1/2 cup vinegar
2 flavor pkts from the Ramen noodles
Blend these together until the sugar is dissolved.
Combine all of the ingredients together by adding the chicken to the vegetables, then addingthe dressing and then stirring in the crunchy noodle mixture. Serve immediately.
