Shrimp fried rice is a great Chinese recipe that is easy to make, and is a great way to turn leftover rice into an impressive meal.
Ingredients:
- 1 1/2 cups white rice
- 3 cups water
- 4 tablespoons vegetable oil
- 1 cup fresh bean sprouts
- 1/2 cup onion, chopped
- 1 1/2 cups medium shrimp, cooked, peeled, deveined and de-tailed
- 1/4 cup green onion, chopped
- 2 eggs, beaten
- 1 teaspoon salt
- 1/4 teaspoon ground pepper
- 4 tablespoons soy sauce
- 1/4 teaspoon sesame oil
Directions:
1. Cook rice according to directions, set aside and cool.
2. Preheat a large skillet or wok, then pour in vegetable oil, bean sprouts and onions. Mix well and saute for 3 minutes.
3. Mix in cooled rice and prepared shrimp and cook three more minutes, stirring constantly.
4. Add green onions, eggs, salt, pepper, soy sauce and sesame oil. Cook four more minutes, stirring continuously, until eggs are cooked.
