Recipes: Creative meatball dishes

When I had young children, I made a fascinating discovery. They would eat any meat that I could roll into a ball and place on their plates. My kids weren't big meat eaters, but for some reason, this transformation of a flat piece of meat to a circle made all the difference in the world. Adults love them as well. This recipe is a simple meal to prepare and rather economical, too. It is meant to be served over rice, mashed potaties, or noodles.

MEATBALLS AND GRAVY

*Ingredients
2 lbs. ground beef
1 tsp. salt
1 egg
1/4 cup milk
1 cup oatmeal
pepper to taste
3 Tbsp. flour
1 can onion soup

*Instructions
Mix above ingredients, except flour and soup, together and form into balls. Brown in skillet. Take out balls and add 3 Tbsp. flour to fat; brown, and add 1 can onion soup and 1 can water. Boil 1 minute. Add meatballs and simmer for 1/2 hour. Serve over mashed potatoes, rice or noodles. Enjoy!
