What a treat it is to have a jar of homemade jam sitting on the table. It is great on toast, biscuits, pancakes and many other foods. The store-bought jars are nowhere close to the same as the fruit spread that is made fresh.
For the longest time, I thought that you had to be a canner to make fresh jam. Since I was not one, I was left to hope and wait for the folks with that skill to be generous with the fruits of their labors. I usually lucked out and gained a couple of jars or so, but that went as fast as lightning in our house. When I finally ran across a recipe that required no talent for canning at all, you can bet I was ready to give it a try. Sure enough, it was great! Here is the recipe that I used and I guarantee that if I can do it, so can you!
STRAWBERRY JAM
*Ingredients
16 oz. strawberries (can use frozen)
2 cups granulated sugar
3 Tbsp. powdered fruit pectin
1 Tbsp. lemon juice
*Instructions
Place strawberries in a 2 quart casserole dish. Microwave for 2 minutes. Stir in powdered fruit pectin; cook 2 minutes, or until a few bubbles surface. Stir in sugar and lemon juice. Cook in microwave for 6 minutes, stirring every 2 minutes. Pour into glass jars. Cover and refrigerate.
Serve and enjoy!
