Adobo is arguably the most universally recognized Filipino dish, other than the popular lumpia (eggroll) or the varietal pancit noodle. Adobo is more of a method of preparation than a particular dish name and is commonly used as a quick-n-easy comfort food, to fulfill family cravings. Flexibility is a popular trait of adobo eaters, because this Filipino dish allows the preparer to cook with any of a variety of meat selections.
Ingredients:
- 1 1/2 lbs. of pork shoulder/chicken breasts and drummettes/lean beef cut into cubes
- 1/4 cup of white vinegar
- 1/2 cup of soy sauce
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 1 bay leaf
- 5 peppercorns, whole
- 2 tablespoons canola oil
Cooking tips:
Begin by heating oil in a non-aluminum, medium-sized pot and sauteing garlic until golden brown. Next, add chopped onion and saute until transparent, then add meat of choice and stir for 3 minutes. Combine the remaining ingredients and cook meat on medium-low, then cover and simmer until thorougly cooked. (Pork 1 hour, chicken 30 minutes, beef 45 minutes)
Serve with rice. (Serves approx. 4 people)
