Tuna fish is a great source of protein that is still relatively economical. Tuna salad is an excellent lunch alone or for guests as are tuna salad sandwiches. The following are recipes for both the salad and the sandwich filler.
TUNA OLIVE SALAD
*Ingredients
1 (7 oz.) can tuna fish
1/2 cup sliced olives
2 Tbsp. minced onion
3/4 cup mayonnaise
1 Tbsp. mustard
3 cups cooked macaroni
*Instructions
Boil macaroni until fully cooked. Rinse and place in a large bowl with tuna and minced onion. Add olives and mayonnaise mixed with mustard. Mix well and serve.
TUNA SALAD FOR SANDWICHES
*Ingredients
2 cans tuna
1 stalk celery, minced
1/4 cup onion, minced
1 Tbsp. pickle relish
1/4 cup mayonnaise
*Instructions
Mix all ingredients together thoroughly in a mixing bowl. Spread on bread. Toasted bread is best to me, but to each his or her own.
To make them warm, spread a layer of tuna mixture on toast, place a slice of your preferred cheese on top and broil, open-faced, until cheese is melted. Delicious!
