Tomato soup is one of my childrens' favorite dinners, served with grilled cheese sandwiches. The ease of preparation makes it one of my favorites, as well. The canned soups have nothing on one that is made at home with fresh vegetables. Here is the basic tomato soup recipe, but you can add practically anything to jazz it up. Some of the additions I like are spicy sausage slices, onion and bell pepper, or shredded mozzerella cheese and parsley sprinkled on top.

BASIC TOMATO SOUP

*Ingredients
6 ripe tomatoes, chopped
2 Tbsp. butter or oil
3 cups chicken broth
1 cup whole milk
salt and pepper to taste

*Instructions
Saute the tomatoes in butter or oil until they are tender. Add the broth to the tomatoes in a medium saucepan; simmer for 20 minutes. Puree together in a blender or food processor then put back in saucepan. Add milk. Salt and pepper to taste. Heat through and serve.

Cream can be used in place of the milk for a thicker, creamier soup.
