Do you want to serve a special treat to your guests? This recipe for Salmon Patty Balls is very simple to make, and spread out onto a bed of crisp green lettuce it becomes the entre that everyone will fight over.
Ingredients:
3 cups of drained flaked salmon
1 cup of mayonnaise
tsp mustard
tsp ground lemon pepper
2 tbsp dill pickle juice
small onion OR 1 spring onion diced
1 stalk celery - diced
salt to taste
2 tbsp parsley flakes
Things you'll need:
Medium mixing bowl, small mixing bowl, mixing spoon, ice cream scoop, large platter, green lettuce leaves
1) Spread the lettuce leaves over the platter and put to the side.
2) In the smaller mixing bowl, combine the salmon, onions and celery. Mix together well.
3) Add the spices and mix together.
4) In the larger mixing bowl, combine the mayonnaise, mustard and pickle juice.
5) Pour the salmon mixture into the mayonnaise mixtures and mix together well.
* You can use more mayonnaise if you prefer the mixture to be creamier.
6) Scoop the salmon mixture into small balls and place onto the platter of lettuce.
7) Sprinkle the parsley evenly over the platter for the final topping.
Leave in the refrigerator covered for about two hours and then serve.
