Recipes: Deep fried chicken wings

Here in the heart of the south, deep fried chicken wings are more than a quick and yummy treat that can be prepared in a variety of ways. They are a necessity at get-togethers and are one of the first things most southern women learn to cook. If you have never made or eaten them you don't know what you are missing!

When you make deep fried chicken wings, you can't go wrong. They make a terrific snack when you are not hungry enough for dinner. They are also great appetizers when you are hosting a party. In fact, no sports function or tailgate party is complete without them. If you want to please a crowd, you definitely need to know your way around a chicken wing!

~Southern style chicken wings~

You will need:

Twenty-four chicken wings
Two eggs
One cup of orange juice
Two or Three cups of flour
One-third cup of sesame seeds
Salt and pepper to taste
Two zipper seal storage bags

First preheat cooking oil in a deep fryer or a very large cooking pot. Blend together eggs, orange juice, sesame seeds, salt, and pepper. Pour this mixture into one of the bags. In the other bag, pour in your flour.

Place the chicken wings in the bag full of flour and seal it up. Shake the bag like your life depends on it. When the chicken is white, put it in the bag that contains your liquid mixture. Shake it until the meat is wet and there is little to no liquid left in the bag. Now, put the chicken back in the flour bag again. Shake-shake-shake!

Gently ease the chicken into the oil. You can use your hands or tongs. Practice caution, the oil will be very hot! Let it cook for seven to ten minutes or until the chicken is golden-brown. Remove the pieces of chicken from the oil and place on a paper-towel lined plate to let the grease drain.

Of course no chicken wing is complete without a dip. You can use ranch or cheddar dips bought in stores or you can go one step further by custom making your own dip!

~Blue cheese dressing~

You will need:

One half cup of dairy sour cream
One half cup of mayo
One cup of crumbled up blue cheese
One tablespoon of white vinegar
Minced Garlic

Blend ingredients (except half a cup of the cheese) by hand two minutes or until smooth. You can use a blender or food processor if you prefer. Once the dressing is smooth, sprinkle it with the remaining cheese. Chill in the fridge and serve with your chicken.

The next time your favorite team is playing, invite all of your rowdy friends and sports rivals over and try out this delicious recipe. Your friends will enjoy them so much that they might even forget who won or that their team didn't. The best part is you won't have to spend a lot of time in the kitchen and you will be able to remind them just how bad your team skunked theirs!
