Recipes: Crockpot tortilla soup using taco mix

There is no better way to warm up your family on a cold winter day than this tortilla soup. Because it is made in the crock pot, your home will fill up throughout the day with the scents of home cooking, Mexican style.

CROCK POT TORTILLA SOUP

*Ingredients
16 ounce can tomatoes
1 medium onion, cut up
2 clove garlic
4 tablespoons snipped cilantro
1/2 teaspoon sugar
8 cups chicken broth
1 1/2 lbs chicken breast, cooked and shredded
3 smoked jalapeno peppers
1 packet taco seasoning mix
For garnish:
shredded Monterey jack cheese
avocados cut up
Tortilla chips
Sour cream

*Instructions
In blender combine undrained tomatoes, onion, garlic, cilantro, and sugar. Cover and blend till nearly smooth. Put mixture into large crockpot with chicken broth, chicken, smoked peppers and taco mix. Stir well to combine. Allow to cook on low for or 8-10 hours or on high for 5-7 hours.

Put crunched tortilla chips in a bowl with cheese, avocados, and sour cream (omit if desired) . Ladle soup over; serve immediately. Makes 8 or 10 servings.
