This is something I have been thinking about for a long time and I'm sure other people have too. Why grated cheese tastes better than sliced?

After thinking about this for some time it suddenly hit me. I remember in school doing experiments with certain flammable metals. The more fine the powder the more reactive the metals where.

This is the same for cheese, the finer you grate it the more surface area there is to make contact with your tongue. This makes the taste stronger. There are also other factors which can contribute to this for example when you grate the cheese more of the chemicals which cause the taste are released. Grating the cheese also exposes the more fresh cheese underneath the "skin" the part which has not been exposed to the air.

All three of these factors cause the taste to be more intense and pleasing to the taste buds.
