Soup is one of the easiest meals to prepare because it virtually cooks itself. You just have to figure out which ingredients you want in your soup, pop them into a large pot filled with water, set the heat on low and let your soup cook itself. No standing over a hot stove for hours and then finding yourself stuck with loads of dirty pots to wash afterwards. When preparing soup for supper one pot and about twenty minutes of preparation time will get you a huge stock pot of soup.
Vegetables soups are some of the easiest to prepare and there are a variety of soup recipes that can be created just by changing a few of the basic ingredients.
Basic Vegetable Soup Recipe:
One envelope onion soup mix
Five medium sized potatoes
Five carrots
Four stems of celery
One small onion
One cup frozen peas
One cup frozen corn
Three cloves of garlic
Salt and pepper to taste
1. Peel, chop and dice vegetables. Place them in a large pot.
2. Fill pot with water just enough so that it covers the vegetables. Place on medium high heat till it reaches a boil.
3. Reduce heat to low and allow the soup to simmer till vegetables are tender.
Three large onions
Two green peppers
Two large cans of diced tomatoes
Five Carrots
One bunch of celery
One bulb of garlic
Half a head of cabbage
One large can of tomato soup
1. Wash and chop vegetables into smaller pieces. Combine ingredients in a large stock pot with just enough water so that it covers the top of the vegetables.
2. Place on medium high heat and allow the soup to come to a boil.
3. Reduce heat to low and allow the soup to simmer till vegetables are tender.
Note that this is the same soup that is used in the cabbage soup diet plan. The ingredients used in the creation of this soup take so much energy for your body to digest, that they will actually cause you to lose weight, when you consume it.
Borscht Recipe
One carrot
Two large cans diced tomatoes (diced)
One stem of celery (sliced)
One large onion (diced)
Two garlic cloves (diced)
One bay leaf
One half head of red or green cabbage (diced)
Two pounds of beets (diced)
Two (one half inch thick) slices of ham (diced)
1. Put all ingredients into a large stock pot. Add just enough water to cover the top of the vegetables.
2.Cook at medium high heat till soup reaches a boil. Reduce heat and simmer till vegetables are tender.
