Sweet potatoes with a kick that's so good you'll think it is dessert. Try something out of the ordinary with this sweet potato pudding.
* 1/4 cup soft butter
* 1/2 cup sugar
* 1/4 cup packed brown sugar
* 2 eggs, beaten
* 1 teaspoon cinnamon
* 1/4 teaspoon nutmeg
* 1/4 teaspoon cloves
* Pinch salt
* 2 1/2 cups grated raw sweet potatoes, peeled
* 1 1/2 cups milk
* 1/2 cup good whiskey (optional)
Preheat oven to 400. Prepare a 2 quart casserole by coating with butter.
In mixing bowl, cream butter and sugars until well blended and light. Beat in eggs, spices and salt. Stir in potatoes, milk and mix thoroughly. Pour into prepared pan.
Bake until set and golden, about 30 minutes. Drizzle whiskey over top and let cool on a wire rack. Stir right before serving. Serve with cream.
A portion for the kids can be taken out before adding the whiskey.
