Easy Lasagna
This simple dish makes preparing a lasagna both easy on the budget and the cook. The recipe is basic, but you can vary the sauce and vegetables to make it a bit different every time you make it. You can also add a layer of cooked hamburger or leftover meat to the first layer of the dish, or use a combination of different cheeses to create your own version.
1 lb. frozen beef ravioli
1 lb. frozen cheese ravioli
1 jar or can meat flavored spaghetti sauce
1 cup shredded mozzarella cheese
6 slices provolone cheese
1 package frozen chopped spinach thawed
1 tsp. Italian seasoning divided
Preheat the oven to 350 degrees F.
Cook the ravioli according to package directions until just about tender.
Squeeze the excess liquid out of the thawed spinach and put aside.
Pour a thin layer of sauce into the bottom of a greased 9 x 13 inch baking dish and spread it out evenly.
Put half of the ravioli on top of the sauce, sprinkle with half of the seasoning, top with half of the spinach, and all of the provolone cheese, evenly spaced. Pour half of the remaining spaghetti sauce over the cheese.
Top with the other half of the ravioli. Sprinkle with the other half of the seasoning. Top with the other half of the spinach and spaghetti sauce. Sprinkle with the mozzrella cheese.
Bake covered about 30 minutes or until the cheese is melted. Remove from the oven, uncover and allow to sit about 5 minutes before serving.
Serve with heated storebought garlic bread and a salad made of prepackaged greens drizzled with an oil and vinegar dressing. Crisp cookies would make an ideal dessert.
Refrigerate any leftovers. Recipe can be doubled.
