As a child growing up this bread was an essential part of the holidays. The wonderful sweet aroma of the bread baking in the oven would fill the air and mark the beginning to the magic of the holiday season.
The holidays wouldn't be the same without this famous banana bread. Not only does it grace our table at the holiday season but I also use these delicious loaves along with other home made goodies to make holiday gift baskets for family and friends.
Two of our favorite things to make with the left over banana bread is cream cheese sandwiches and banana bread French toast. If you should happen to get your bananas but don't have time to make the bread, here's a little hint for preserving the bananas until you have time to bake. Just put those over ripened bananas in the freezer until you are ready to make your bread then just add a little extra flour to make up for the water gained from freezing until you have the correct consistency.
Ingredients:
3/4 cup sugar
2eggs
1/2 cup butter
3/4 teaspoon baking soda
1 3/4 cups flour
3 over ripened bananas
1/4 teaspoon salt
1 teaspoon cinnamon
1/4 cup chopped walnuts
Cream together sugar and shortening until smooth. Add eggs and mashed bananas. In separate bowl combine dry ingredients. Add slowly to wet mix stirring after each addition. Preheat oven to 350 degrees. Pour mix into greased loaf pan and bake for 40 minutes. cool on a wire rack. makes two loaves. If you are going to make food baskets for your friends and family you can use the mini loaves for your breads and you will yield 4 loaves.
