Recipes: Chicken fettuccine alfredo

Smooth, creamy, loaded with flavor, and aroma. Chicken Fettuccine Alfredo is one of the gourmet comfort foods. Those foods that remind you of your childhood home and mom at the stove putting all her love into the meals she made for her family. A quick and easy dish that the entire family will love. Before you start you will need a double boiler, a strainer and a pan, in which to cook the fettuccine, measuring cups and spoons.

Ingredients:
2 cups fettuccine
1 lbs boneless chicken
2 tablespoons white flour
1 cup cream
1/2 cup Parmesan cheese
4 tablespoons butter
1 clove garlic
1 tablespoon pepper
1/2 teaspoon salt
olive oil

With a sharp knife cut chicken into bite size pieces and place in a heated pan with olive oil. Saute chicken until white and set aside. Place fettuccine in pot with boiling water with a tablespoon of oil to prevent sticking, cook for about 15 minutes or until fettuccine is done but not starchy. In double boiler over boiling water, melt butter and slowly add flour stirring while adding to prevent clumping. Add garlic and cream ensuring that the mixture is on med-low heat so as not to thicken too fast. Slowly add Parmesan cheese stirring after each addition of the cheese so as not to clump. Raise temp of water to med high for the thickening process add salt and pepper to taste. Stirring constantly while the mixture thickens. Add chicken to thickened sauce stirring to coat all of the meat. Place cooked fettuccine on serving dish and pour sauce with meat over the pasta. Serves 6

Do you love  Alfredo but not the high calories well just try this on for size, just replace the cream with fat free evaporated milk, the butter for fat free spray, I use 'I can't believe its not butter" and the fettuccine with the whole wheat version. You will enjoy this because it tastes as close to the real thing as you can get. Last but not least replace the chicken with veggies for a pasta primavera.
