Recipes: Baked sweet potato fries

Baked sweet potato fries are an excellent way to cut down on the fat of regular fries. They are also more nutritious, providing vitamins that are not found in your standard potato. The kids will still love them, maybe even more with their naturally sweet taste, and they still complement your hamburgers!

BASIC SWEET POTATO FRIES

*Ingredients
Non stick cooking spray


1 lb medium sweet potatoes
1 Tbsp butter, melted
1/4 tsp seasoned salt
Dash ground nutmeg

*Instructions
Lightly coat 15 x 10 x 1 inch baking pan with cooking spray. Scrub potatoes; cut lengthwise into quarters. Cut each quarter into two wedges. Arrange potatoes in a single layer in pan. Combine margarine or butter, salt, and nutmeg. Brush onto potatoes. Bake at 425 degrees for 20-30 minutes or until brown and tender.

SPICY SWEET POTATO FRIES (allrecipes.com)

*Ingredients
6 sweet potatoes, cut into French fries
2 tablespoons canola oil
3 tablespoons taco seasoning mix
1/4 teaspoon cayenne pepper

*Instructions
Preheat the oven to 425 degrees F (220 degrees C).
In a plastic bag, combine the sweet potatoes, canola oil, taco seasoning, and cayenne pepper. Close and shake the bag until the fries are evenly coated. Spread the fries out in a single layer on two large baking sheets.
Bake for 30 minutes, or until crispy and brown on one side. Turn the fries over using a spatula, and cook for another 30 minutes, or until they are all crispy on the outside and tender inside.
