How to make a great sandwich

attending the University of Southern California, I discovered a sandwich shop on Figueroa called The Sub Station. You guessed it...submarine sandwiches. They offered a full menu of delectable sandwiches many of which bore the names of famous people and politicians. My favorite was named for former New York Mayor John Lindsay. There were two varieties of the John Lindsay, there was the Republican version and the Democrat. It seems Mayor Lindsay changed boats midstream as it were. The John Lindsay Republican was a sub with mayonaise and mustard, piled high with hot pastrami and swiss cheese. Lots of diced dill pickes, onions and olives were added. Did I mention this sandwich was served hot? The melting swiss and the hot pastrami accented by the pickles, et. al. were almost too much to bear. The very thought of this gastronic delight still makes my mouth water.

In San Diego, California, out on El Cajon Boulevard, there's a greasy spoon diner called Rudford's. I don't know if it's still there or not. But they had a Reuben sandwich that was to die for. It consisted of grilled rye bread piled high with fresh, hot corned beef, swiss cheese and sauerkraut. It was served with a side of Thousand Island dressing which one would dip the sandwich in before gobbling it down.

One of my personal favorites is a sandwich made with foccacia bread. The foccacia is sliced and covered with melted butter that has a bit of oregano, garlic and rosemary in it. Between the slices, you place a couple slices of sliced tomato, a slab of mozzarella cheese and topped with a sprig of fresh basil. You place both open sides under the broiler for a few minutes, just until the cheese starts to melt, then slap the two halves together and it gives a whole new meaning to vegetarianism.

Regardless of who you are, or what your personal taste in food is, the sandwich is the great equalizer. Whether you be a Lord or Lady, or just plain folk, we all have our favorite sandwiches. Some were made by mom or grandma, and some we just stumbled upon on our journey through life. I'm hoping yet to discover something as earth-shakingly delicious as the sandwiches I've thus far mentioned. My advice to you is to experiment and enjoy.
