For ease of preparation casseroles can't be beat! A busy cook will no doubt have a collection of great casserole recipes from which to choose at her fingertips. The following recipe is worthy of a place in that collection utilizing fiber packed wild rice, brightly colored vegetables and low fat chicken breasts all in one dish!
-Chicken, Broccoli & Wild Rice Casserole
Serves 4-6 people
1 box Wild Rice Blend, cooked
4 boneless, skinless chicken breasts
1 tbsp. seasoned salt
2 tbsp. all purpose flour, divided
2 tbsp. olive oil
1 medium yellow onion, diced
1/4 red bell pepper, diced
1/4 yellow bell pepper, diced
1 bunch fresh, chopped broccoli, frozen may be substituted
1/2 cup grated cheddar cheese
1 can cream of chicken soup, undiluted
1 cup milk or half and half
1/4 cup water
2/3 cup cracker crumbs
2 tbsp. melted butter
1/4 cup grated Parmesan cheese
Preheat oven to 350oF. Butter or spray a large casserole dish with non-stick cooking oil.
Cook wild rice blend according to package directions. Reserve.
Cut chicken breasts into cubes, season with 1/2 tbsp. seasoned salt, dust with flour. Saute in olive oil until browned on all sides.
In a large bowl add, cooked rice, chicken, soup, water, milk, vegetables, remaining seasoned salt and cheddar cheese. Stir to combine well.
Place mixture into prepared casserole dish and smooth top with spoon.
Combine cracker crumbs, melted butter and Parmesan cheese in a small bowl, stir well, sprinkle crumb topping over top casserole.
(Casserole may be wrapped tightly with foil at this point and frozen. When you want to bake it off, remove from freezer and allow casserole to sit at room temperature for 1 hour before baking.)
Baking directions:
Place in preheated oven, bake 18 minutes covered, remove cover and bake additional 8-10 minutes or until bubbly and crumb topping is browned.
Serve with hot dinner rolls and perky, sliced tomatoes!
