Mom's Special Banana Split
Use Chocolate Banana Bread slices as your base
Three scoops of home made banana ice cream
Place banana slices around the edges
Drizzle chocolate syrup on top
Sprinkle with walnuts, squirt with whipped cream, top with a marchinno cherry.
Mom made this special banana split for teens that came to our house after the evening church service but let the teens choose their own toppings. Our parents would take turns hosting the teens and we called it fun and fizz. That meant we had fun, fellowship with delicious food served by the host. We had soda pop, chips, special desserts, homemade icecream, pizza and dips that all teenagers love. This kept the teens from getting into mischief in other places in town and mom and dad knew where we were. It would be announced in the church bulletin where the fun and fizz would be.
My mom would make the best homemade banana ice cream and would have the teens help crank as it froze. That was fun and the faster they cranked the quicker it got done. Teens help add ice and ice salt as needed.
Then mom would set all the fixings for a banana split on the table so we could all choose what we wanted. Teens have a lot of likes and dislikes and some were allergic to nuts. She had bowls of blueberries, strawberries, raspberries, and pineapple chunks to choose. Containers filled with different syyups like Maple, caramel, chocolate, and hot fudge to drizzle on top as much as we wanted. Cool whip of whipped cream with a bowl of marchinno cherries. There were several bowls of nuts like walnuts, peanuts, almond slivers and pecans. She even put out several different ice creams to choose. What fun to make our own special banana split.
Other host parents when it was their turn served special desserts or pizza and chips. The host parent got to choose whatever they wanted to make.
So now it is time to make your chocolate banana bread.
Chocolate Banana Bread
1 2/3 cup whole wheat flour
1/3 cup cocoa powder
1/2 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
3 large mashed bananas
1/3 cup wonderslim fat substitute (purchase at a health store)
1 teaspoon vanilla extract
1/3 chopped walnuts
Mix dry ingredients
Add Bananas, wonderslim, vanilla
Stir until moistened
Fold in walnuts
Spray loaf pan with Pam
Bake 350 degrees for 50 minutes
or until toothpick inserted comes out clean
Remove from oven
Let sit in pan 10 minutes
Remove from pan
Cool before slicing
Enjoy your chocolate banana bread and let the teens be creative adding different toppings to their liking.
