Say summer and bananas and what image will come to mind? Most likely - Banana Split. Indeed, the following recipe is inspired by banana splits. It's a little more intricate though, but easy enough to make.
BANANA SPLIT DESSERT
1/2 cup butter, melted
2 cups graham cracker crumbs
2 eggs
2 cups sifted powdered sugar
3/4 cup butter, softened
1 teaspoon vanilla
4 medium bananas, sliced
1 (20 oz.) can crushed pineapples, drained
1 (9 oz.) carton Cool Whip
1/2 cup chopped pecans
1 (4 oz.) jar maraschino cherries
chocolate syrup
Combine melted butter and cracker crumbs. Put in bottom of 13x9x2 inch pan. Beat eggs on high speed until light. Add powdered sugar, butter, and vanilla. Beat five minutes. Spread over crumbs and chill for 30 minutes.
Spread pineapple over creamed mixture. Arrange banans over pineapple and cover with Cool Whip topping. Sprinkle with pecans. Cover and refrigerate for six hours. Garnish with cherries and chocolate syrup. Makes 12 servings.
