Thank you, Bisquick! You have made every meal a bit simpler for me, an intermediate cook, at best. Coffee cake being one of my favorite treats, I was thrilled to find the recipe on the side of the box years ago. There are also many ways to "spice" it up, with various fruits. The following are a couple of my most beloved Bisquick coffee cake recipes. I am sure they will be yours, as well.
BASIC BISQUICK COFFEE CAKE
*Ingredients
CAKE
2 tablespoons sugar
1 egg
3/4 cup milk
2 cups Bisquick baking mix
TOPPING
2 teaspoons cinnamon
1/4 cup sugar
2 tablespoons Bisquick baking mix
2 tablespoons margarine or butter
*Instructions
Blend all of the coffee cake ingredients.
Beat vigorously for 30 seconds.
Spread into greased 9" layer pan or 8" square pan.
For topping, blend all topping ingredients with fingertips until crumbly.
Spread topping on coffee cake.
Bake at 400 degrees for 20-25 minutes.
FRUIT SWIRL COFFEE CAKE
*Ingredients
4 c. Bisquick mix
1/2 c. sugar
1/4 c. butter, melted
1/2 c. milk
1 tsp. vanilla
1 tsp. almond extract
3 eggs
1 (21 oz.) can cherry or blueberry pie filling
*Instructions
Heat oven to 350 degrees. Grease 15 1/2 x 10 1/2 x 1 inch pan.
Mix all ingredients except pie filling and glaze; beat vigorously for 30 seconds. Spread 1/3 of the batter (about 1 1/4 cups) in pan. Spread pie filling over batter (filling may not cover batter completely). Drop remaining batter by tablespoonful onto pie filling.
Bake until light brown, 20-25 minutes. Drizzle with glaze while warm. Serve warm or cool.
GLAZE:
1 c. powdered sugar
1-2 tbsp. milk
Beat sugar and milk until smooth and of desired consistency.
You can use any flavor pie filling desired in this recipe and it will turn out absolutely delicious! So, when the family asks, "What's for dessert tonight?", you too can say, "Thank you, Bisquick!"
