It's summertime and it is simply too hot to bake. But don't suffer any worries that you and your family won't have homemade cookies, there are a treasure trove of no bake cookie recipes out there, you just have to choose the one right for you. Each of these taste tantalizing recipes will quickly and easily offer your family all the flavor of homemade cookies without you ever having to turn the temperature dial up on your oven.
Peanut Butter Ball Recipe
Ingredients:
One half cup nonhydrogenated margarine
Two teaspoons vanilla
One quarter teaspoon of salt
Two cups creamy peanut butter
Two cups confectioners sugar
Two cups walnut pieces
Two cups graham cracker crumbs
One cup confectioners sugar
Two cups semisweet chocolate chips
Two tablespoons shortening or oil
1. Cream together the margarine, vanilla, salt and peanut butter. Blend in two cups of the confectioners sugar, walnuts and graham cracker crumbs. Mix until dough is formed.
2. Form dough into balls by rolling teaspoonfulls of the mixture in your hands. Coat each ball in the remaining confectioners sugar.
3. Set balls on a cookie sheet and refrigerate until firm.
4. Once chilled the cookies can be dipped in melted chocolate or you can choose to keep them plain. Store in an airtight container in the refrigerator.
To Coat Balls In Chocolate: Melt chocolate chips and shortening in a saucepan over medium heat. Stir constantly. When chips are melted remove pan from heat. Use a toothpick inserted into each peanut butter ball to dip the ball into the melted chocolate. When coated set each ball on waxed paper to harden.
Chocolate Cornflake Cookies
Ingredients:
Four tablespoons nonhydrogenated margarine
Four tablespoons maple syrup
Four ounces semisweet chocolate
Four cups cornflakes cereal
1. Lay out a sheets of wax paper on your counter for the cookies to cool on.
2. In a double boiler over medium heat melt margarine, maple syrup and chocolate. Stir mixture constantly until chocolate is fully melted and this chocolatey sauce is well blended together.
3. Stir the cornflakes cereal into the chocolate sauce.
4. Drop by heaping spoonfuls onto waxed paper to firm. Store in the refrigerator in a sealed container.
Chocolate Oatmeal Drops
Ingredients:
Two cups white sugar
One half cup nonhyrogenated margarine
One half cup milk
Three cups quick cooking oats
One half cup coconut
One half cup cocoa
1. Set out sheets of wax paper on the counter to set finished cookie dough on.
2. Combine together oats, coconut and cocoa in a large mixing bowl. Stir till oats and coconut are coated with the cocoa.
3. Combine margarine, white sugar and milk together in a medium sized saucepan over medium high heat. Stir mixture constantly until mixture boils for five minutes. Remove from heat and add vanilla.
4. Pour this sauce over the dry ingredients and blend together.
5. Drop by teaspoonfulls onto wax paper to firm. Put cookies in the fridge to cool. Store finished cookies in enclosed container in the refridgerator.
