On the go: Preparing a healthy breakfast in 5 minutes

If you're up early and on the go, preparing a healthy breakfast in 5 minutes means a few more minutes of sleep and a healthy start to your day. Planning ahead and doing some prep work the night before, can be the difference between a cold bowl of cereal and a tasty breakfast. Here are tjree on-the-go healthy breakfast ideas, all of which take five minutes or less to prepare.

♦Large Egg-Salsa-Cheese Burrito♦

2 eggs

4 tbs. salsa (hot, medium or mild)

1/4 cup grated cheese of choice

2 tbs. low-fat sour cream

Salt to taste

1 6" tortilla wrap

-Place the tortilla in a zip lock bag and microwave for 10 to 15 seconds. Set aside

-Spray a square microwaveable dish with cooking spray. Crack the eggs into the dish and scramble with a fork. Add salt. Microwave for 30 seconds and stir. Microwave at 10-second intervals until egg is set to your liking.

-Cut set eggs in half and place in tortilla wrap, add salsa, sour cream and cheese. Roll up and enjoy with your favorite juice. This recipe is also good using pocket bread.

♦Whole Wheat English Muffin with Cheese and Egg♦

1 Whole Wheat English muffin

1 egg

1 pat butter

1 cheese processed cheese

Salt and pepper to taste

-Before you go to bed, spray a small microwaveable dish with Pam. Cover it and leave it by the microwave.

-In the morning, crack an egg in the dish; cover the egg with water and microwave for one to two minutes. As soon as the egg is in the microwave, drop the English muffin in the toaster and pour a glass of orange juice.

-When the muffin pops up, add a little low-fat butter, and a slice of cheese. Drain the water from the egg, add salt and pepper and place on the muffin. Enjoy a breakfast that includes all you need to get you going.

♦Banana Strawberry Smoothie♦

1 Banana cut in pieces

1 carton strawberry yogurt or flavor of choice

2 tbs. bran or wheat germ

1 cup milk

3 ice cubes

-Add all ingredients to a blender and blend for one minute.

♦Oatmeal with Raisins and Pecans♦

1 pack instant oatmeal

1/4 cup raisins

2 tbs. sliced and toasted pecans

Pinch of cinnamon

Salt to taste

1/2 cup milk

-Before going to bed, measure water for oatmeal plus 2 tablespoons (raisins will absorb it) into a microwaveable bowl. Cover and place in refrigerator.

-In the morning, add the pack of instant oatmeal, salt, cinnamon and pecans to bowl and microwave. When done, pour on the milk and enjoy.

Preparing a healthy breakfast in five minutes, doesn't mean you are stuck with cold cereal. Breakfast is too important to skimp on flavor or nutrition. Using your imagination and the modern day conveniences we now have, make it easy to start your day out right.
