Recipes: Pork fried rice

Have you been looking for a different way to make pork fried rice? This is it! Full of fiber and good fresh vegetables, this recipe is just what you wanted. To bring the fiber content up a notch, wild rice is combined with white in this unique version of fried rice. This fiber packed, vegetable laden dish is colorful, flavorful and quick cooking.

-Pork & Fried Wild Rice

2 cups cooked wild rice
1 cup cooked jasmine rice
2 eggs
6-8 tbsp. oil
1 cup chopped onions
1 tbsp. minced garlic
1/2 cup green scallions cut on the diagonal
1/4 cup cooked carrot, diced
1/4 cup red bell pepper, diced
2 celery ribs, diced
1/4 cup shredded Chinese cabbage
1/8 cup fresh bean sprouts
1 cup roasted pork, diced
1 tsp. Chinese 5 spice powder
1 cup fresh peas, frozen may be used
1/2 cup tamari soy sauce
salt
pepper

Combine cooked rices in bowl, stir to combine. Set aside.

Heat 3 tbsp. oil in a wok or large skillet over medium high heat. Combine pork, salt, pepper and 5 spice together in a bowl toss lightly to coat meat. When oil is hot, add seasoned meat. Stir fry for about 3 minutes. Remove and reserve.

Add remaining oil to skillet or wok, bring to high heat. When oil begins to smoke add carrots, red bell pepper, celery and onions, stir fry 3 minutes. Add cabbage, peas and garlic, stir fry 2 minute. Reduce wok heat to medium

Whisk eggs together in a bowl. In wok, make a well in center of cooking vegetables and add eggs to well, scramble for 1-2 minutes. Combine with vegetables. Add scallions and cooked rice, stir fry 2 minutes. Add reserved, seasoned meat stir fry 1 minute, add tamari and stir in. Remove from heat.

Serve this spicy, wild fried rice combo with any oriental style meat and vegetable, this recipe is sure to please any fried rice fan!
