Recipes: Mexican recipes for a dinner party

Hosting a Mexican dinner party can be a very festive event. Each of these recipes will serve 8 guests and can be served as a sit down meal or buffet style.

NACHOS

2 pounds of ground hamburger
2 - 8 ounce cans of re fried beans
4 jalapeno peppers (chopped)
1- 8 ounce jar of hot salsa
1 pound of green onions (diced)
1 bag of tortilla chips
1 - 8 ounce sour cream

PREPARATION

Cook the hamburger with the chopped jalapeno peppers in a frying pan and drain any fat.

On a large plate evenly spread out the hamburger, then the refried beans, pour the jar of salsa over the top. Place the sour cream in the center in a mound and sprinkle the chopped green onions on top. Place the tortilla chips around the outside edge of the plate.

CORN AND PEPPERS

4 cups of corn (cooked)
1/4 cup of margarine
1/2 cup of green peppers (diced)
1/ 2 cup of red peppers (diced)
1/2 cup of yellow peppers (diced)

PREPARATION
In a large sauce pan boil the corn and peppers together under tender. Place in a large bowl and top off with the butter.

FIDEO (Also known as Mexican spaghetti)

INGREDIENTS

3 chicken breasts (cut in bite size pieces)
3 tomatoes (diced)
1 /2 cup of chopped onions
2 minced garlic gloves
1 cup of water
1 8oz. can of stewed tomatoes
3 Tablespoons of crushed red peppers
1 cup of mozzarella cheese
1 16oz. bag of spaghetti (break in half)

PREPARATION

Cook chicken breast pieces in frying pan until done. Drain and set aside. Cook the spaghetti in a tablespoon of oil for 10 minutes add the chicken and remaining ingredients and cook an additional 15 minutes. Place in a square dish and sprinkle the cheese evenly on top and cover with foil. Serves 6

MEXICAN RICE

INGREDIENTS

3 tablespoons olive oil
3 cups of white or brown rice
1 /4 cup of red peppers
1/ 4 cup of chopped onions
1 tablespoon of onion salt
1 cup of chicken broth
1 cup of tomatoes

PREPARATION

Combine all ingredients in a frying pan and cook for 20 minutes or until the rice is tender.

SPICY MEXICAN RICE

INGREDIENTS

3 tablespoons olive oil
3 cups of white or brown rice
1 /4 cup of red peppers
1/ 4 cup of chopped onions
1 tablespoon of onion salt
1 cup of chicken broth
1 cup of tomatoes
2 tablespoons of crushed red peppers
2 tablespoons of chili powder
2 tablespoons of Tabasco sauce

PREPARATION

Combine all ingredients in a frying pan and cook 25 minutes

These dishes are all delicious and easy to make.
