The high price of meat and the move toward a more healthy lifestyle is on the minds of many these days. Whether you are a vegetarian or just trying to keep your grocery bill in check, finding ways to feed your family a good healthy meal is essential.
Eating healthy should not mean giving up taste or settling for foods you do not care for just because they are considered good for you. Making something healthy out of foods you like is within your reach.
This recipe combines flavor, protein and texture to please the palate.
* 8 to 10 medium green pepper (or any color)
* 2 cups cooked brown rice
* 1 cup green onion
* 1 cup carrot diced
* 1 cup celery diced
* 1 cup cooked pinto beans (or your favorite)
* 1 cup diced tomato (fresh or canned
* Salt and pepper to taste
Prepare peppers by cutting off tops and removing seeds. Drop peppers for a few minutes to boiling water to parboil. Remove and let drain while preparing the stuffing.
In a pan melt three tablespoons butter. Saute onion, carrot and celery until tender. Pour into a large bowl and add remaining stuffing ingredients. If you wish you may add one half to one cup of cheese. There are cheese substitutes available if you wish to make the recipe vegan.
Stuff mixture into prepared peppers. Place in baking dish and bake at 350 for 25 to 30 minutes.
Feel free to add whatever vegetable, spice, etc. you like to the recipe to make it your own.
